Yeah, I noticed that. Apparently the creators liked those characters the most...especially Iruka. Amazing. XD Thats a good question. And here is the answer: Sasuke cannot defeat Itachi. The answer lies within the log. Befriend the log...embrace the log...and you shall have invincible powers. That is the key to defeating Itachi.
